GRAND TIER RESTAURANT When the Metropolitan Opera opens for the regular season on Sept. 23, the restaurant will present its own leading man in a new role. Umberto Montano, left, will export the modern Florentine menu of his restaurant, Alle Murate, which is in a 14th-century frescoed palace in Florence, Italy. Jeff Raider, who will be his executive chef, is in Italy now, training with Mr. Montano: Metropolitan Opera, Lincoln Center, (212) 799-3400.
