Here is the 2010 menu for our restaurant in Florence: Alle Murate.
HORS D’OEUVRES
Pumpkin purée with chestnuts 23 euro
Pickled salmon with goat’s milk cheese and balsamic vinegar 23 euro
Warm salad with squids and traditional southern beans 24 euro
Foie gras escalope, soft-boiled egg, anchovies sauce 28 euro
A selection of Tuscan salami by Simone Fracassi, butcher in Arezzo: prosciutto, lardo and finocchiona 27 euro
FIRST COURSES
Broad beans purée and chicory 24 euro
Broccoli and red beetroot soup 23 euro
Chickpeas soup with cod fish 24 euro
Spaghetti with mussels and parsley 24 euro
Pasta mista, lentils from Castelluccio and crunchy bacon 25 euro
Hand made Tortelli stuffed with goat ricotta and cinnamon, mild paprika sauce and sweet crispy pepper 26 euro
Candele, traditional pasta from Gragnano, lamb sauce and Pecorino 25 euro
Fresh Pappardelle with Cinta Senese pork ragout 26 euro
FISH & VEGETALES COURSES
Stewed cuttlefish with artichokes 30 euro
Our fish soup with crispy bread from Matera 35 euro
Stone-bass fillet with cherry tomatoes, capers, black olives and basil 35 euro
Our vegetarian dish:
melanzane alla parmigiana, dried red pepper and egg flan,
fried pancake with buffalo mozzarella and season vegetable soufflé

TASTING MENU
The most original expressions of our cuisine and the best ways of discovering them: every day we propose a careful selection of dishes from the menu , always closely linked to Italian traditions.
This menu, based on perfumes and flavours interpreted by the chef Giovanna, follows the threads of this tradition.
